| Sugar | 2 oz |
| Allspice | 1 tblsp |
| Rum | 4 1/2 jigger |
| Lime Juice | 3 oz |
| Champagne | 2 oz |
| Orange | 1 spiral |
Gently warm sugar in a pan with 1 1/3 cups water and 1 tbsp allspice. Cook gently until the sugar has dissolved, then leave the mixture to cool. Strain through a sieve lined with a coffee filter. Pour the syrup into a cocktail shaker along with rum and lime juice. Shake with ice and strain between six flute glasses. Top up with champagne and garnish each with an orange twist.
